My Healthy Birthday Cake Recipe

Recently my daughter turned two and we celebrated with a picnic lunch followed by a not-so-average birthday cake. Being a health conscious Mumma and while my now toddler's gut microbiome is rapidly developing, I am determined to create nourishing options, even on special occasions.

This microbiome development is most critical during the first three years of life, setting up a healthy gut and balanced immune system for years to come. Immune Boosting Lemon Slice

Immune Boosting Lemon Slice 

This immune boosting snack is a popular one in our household. There's plenty of vitamin C within the lemon curd filling, plus choline rich eggs for supporting healthy brain development. To super boost the immune properties of the filling, you have the option to mix through Kakadu plum (Gubinge) powder- a vitamin c rich native to Australia. You can also adapt to your desired sweetness (I leave out the sweetener in the filling).

The gluten free base is just delish and you’ll want to use it for all sorts of slice recipes for your family, like my Chocolate Jelly slice (recipe coming soon). If you have tigernut flour, this acts as a prebiotic to improve digestive health but note, it will make for a thicker crust. 

Best of all, you won't be in the kitchen for longer than half an hour.

Gut Healing Berry Gummies 

One of our fav bubba friendly, gut healing snacks, are gummies. They are super quick, versatile to suit the fruit you have on hand and make for a fun healthy treat.

For an immune boosting, vitamin c rich recipe head over here to get my Lemon Lime Gummies

For a more filling creamy, antioxidant rich batch, try my Berry Gummies. This recipe can be adapted to suit your fav fresh or frozen berries and you can give them an optional flavour sensation using essential oils. 

What you'll need:

3/4 cup organic berries of choice, fresh or frozen 

3/4 cup water 

1 cup pure coconut milk (you might need a tad more)

2.5 tbsp gelatine. I use this organic one

1 tsp - 1 tbsp raw honey (depending on your desired sweetness)

3 drops lemon, lime, grapefruit therapeutic grade essential oil* (optional & just for the adults)

5 Tips For A Healthy Easter

Easter is just around the corner! Before you assume your long weekend will be filled with sugary binges and consequently an addition to your waistline, try a few of my tips below. I challenge you to make it a healthy and happy one.

1. START YOUR DAY LIGHTLY:

If you are having a large Easter lunch or dinner, then there is no need to stuff yourself silly from when you first wake up. Some healthy options include a fresh vegetable juice or smoothie.

If you are still hungry 20 minutes later, try some protein rich eggs, nuts or seeds.

2. HELP OUT YOUR DIGESTION:

It is hard work breaking down large amounts and varieties of food over the day. Give your stomach a kick start, by starting each meal with juice ½ lemon, or 2 tsp apple cider vinegar, in warm water.

3. WORK IT OFF:
