Ever get stuck realising you've got nothing planned for dinner after a full day?
For those times you need to whip up something quick with what's on hand, this is the perfect recipe to reach for and satisfy the whole fam.
For a veggie version, you can leave out the fish, otherwise you can use fresh fresh or a tinned version- just aim for wild caught salmon, sardines or tuna from brands like Vital Choice, Mount Paramount, Fish 4 Ever or Good Fish.
Here you go...
160gm fish, cooked (fresh or sustainably caught tinned variety in brine or olive oil, drained)
1 cup mashed sweet potato
1 spring onion, sliced finely
1 tsp fresh oregano, chopped
1 zucchini, grated
1 /2 cup tigernut flour, sifted
1 large egg, beaten
1/3 cup coriander or parsley, finely chopped
1 tsp turmeric spice
1 tsp himalayan or celtic sea salt
1-2 tbsp ghee or coconut oil
Add all ingredients into a large bowl and combine well.
Heat oil or ghee into large fry pan over medium heat.
Use your hands to form balls of mixture and slightly flatten into a patty shape that is around 3cm diameter and 1 cm height. If you're having trouble with the mixture forming a ball, add a sprinkle more of tigernut flour.
Cook for 3-4 minutes before turning over and cooking for a further 3-4 minutes on the other side.
Remove from the pan and serve warm with your favourite salad or green veg.
