One of the traditional ways to celebrate commemorative ANZAC Day, is to whip up a batch of ANZAC Biscuits. If you're after a grain free, refined sugar free option then try my gut friendly version!
GLUTEN FREE ANZAC BISCUITS
What you will need:
- 1 cup almond or other nut flour (for extra prebiotics, use tiger nut flour)
- 1 cup flaked almonds or chopped macadamia or chasew nuts
- 1 cup shredded or flaked coconut (coconut chips)
- 1/4 cup honey
- 1⁄4 cup coconut oil or butter
- 1⁄2 tsp bicarb soda
- 1 tbsp water
How to make your Biscuits:
- Preheat oven to 125 degrees C.
- Combine nut meal, flaked or chopped nuts and shredded coconut in a bowl.
- Add honey and oil/ butter to a saucepan and let it melt over low heat.
- Mix bicarb and water into the melted honey & butter/ oil, until it starts to froth.
- Pour the frothing liquid into the bowl of dry ingredients and mix well.
- Add a little extra water if needed, to help it stick together.
- Roll into balls and squish down to a biscuit sized shape with a fork, on a greased baking tray. You may need to help mould further with your hands, if bits of nuts are falling away.
- Bake in oven on 125 degrees C for 30 minutes, or until golden.
