My Gut Friendly Biccie Recipe

Gut Friendly Biccies

What you'll need:

1 1/2 cup shredded coconut 

1 cup tiger nut flour, sifted*

1/2 cup tiger nut flakes* (you can alternatively use chopped nuts or rolled oats, if they agree with you)

1/2 cup coconut oil

1/8 cup raw honey

1/2 tsp bicarb soda

 *Find these in your local health food shop, selected supermarkets or online. 

What you'll need to do:

  • Preheat your oven to 160 degrees C and line a large making tray with bleach free baking paper
  • Add your tiger nut flour, flakes and shredded coconut into a large mixing bowl and stir
  • Add your honey and coconut oil into a small saucepan over low heat. Allow to melt and then add your bicarb soda and stir until slightly frothy
  • Add your wet mixture into the dry and stir well. If needed, add a little water so the mixture is ready for moulding into biscuits. 
  • Scoop out your mixture and mould into the desired shape of your biscuits and add to your baking tray
  • Once complete, add into your hot oven and bake for 10-15 minutes, or until golden
  • Allow to cool and harden before moving from tray
  • Enjoy now or store in or out of the fridge for later
