My Gut Friendly Biccie Recipe

Nov 23, 2020

Are you finding it hard to find a gut healthy recipe, that caters for the growing number of food intolerances?

Try out my nut free, refined sugar free, egg free, gluten and grain free, dairy free biscuits, be surprised by how simple they are to make and how popular they are with the whole fam. An additional health bonus is their prebiotic benefit from tiger nuts (actually not a nut, instead a tuber), which help to feed your good gut bugs for a healthy digestion and immunity.

Now let's get you baking...

Gut Friendly Biccies

What you'll need:

1 1/2 cup shredded coconut

1 cup tiger nut flour, sifted*

1/2 cup tiger nut flakes* (you can alternatively use chopped nuts or rolled oats, if they agree with you)

1/2 cup coconut oil

1/8 cup raw honey

1/2 tsp bicarb soda

*Find these in your local health food shop, selected supermarkets or online.

What you'll need to do:

  • Preheat your oven to 160 degrees C and line a large making tray with bleach free baking paper
  • Add your tiger nut flour, flakes and shredded coconut into a large mixing bowl and stir
  • Add your honey and coconut oil into a small saucepan over low heat. Allow to melt and then add your bicarb soda and stir until slightly frothy
  • Add your wet mixture into the dry and stir well. If needed, add a little water so the mixture is ready for moulding into biscuits.
  • Scoop out your mixture and mould into the desired shape of your biscuits and add to your baking tray
  • Once complete, add into your hot oven and bake for 10-15 minutes, or until golden
  • Allow to cool and harden before moving from tray
  • Enjoy now or store in or out of the fridge for later

I'd love to know what you think. Are they a winner in your household?
