Chocolate Delights

Try my satiating dairy and grain free Chocolate Delights as a guilt-free way to satisfy your chocolate cravings!

CHOCOLATE DELIGHTS

What you’ll need:

  • ½ cup almonds, macadamias or hazelnuts, activated and chopped
  • ¼ cup walnuts, activated and chopped
  • ¼ cup tahini (hulled)
  • 2 tbsp raw honey, or rice malt syrup (optional)
  • 1 tbsp cacao powder
  • 2 tsp coconut oil / MCT oil
  • ¼ tsp vanilla paste
  • ¼ cup shredded coconut
  • 3-5 drops peppermint, or wild orange essential oil

What you’ll need to do:

  • Add all ingredients together into a food processor.
  • Blend until well combined.
  • Remove a heaped teaspoon of the mixture at a time.
  • Roll the mixture into into small balls.
  • Place onto a plate to serve, or put in the freezer for a treat later on.

Wheat, gluten, sugar and then dreaded additives (colours and preservatives) are frequent occurrences at most kids parties. In clinic, I hear time and time again from upset mothers who take their children to child care, parties, visits to the grandparents (the list goes on)…and back they come with signs and symptoms of junk food overload. This can include behavioral issues, skin conditions (such as eczema), digestive disturbances and a struggling immune system for days following.

We all love to be able to spoil our little ones, with loads of hugs and kisses, presents and yes, the sweet treats. Its ok for kids to have some sweet surprises, but you can do this without exposing them to unnecessary nasties. I challenge you to try whipping up my Naturopath approved kids treats instead!

Healthy Choc Fudge

This gluten, dairy and refined sugar free fudge is perfect for times times when you’re craving a chocolate treat. The good fats from the coconut oil and nut butter will help to keep your satiated, prevent insulin and leptin resistance and therefore overeating. You will be able to impress your friends with dessert when next socialising, without compromising your health!

HEALTHY CHOC FUDGE

WHAT YOU WILL NEED:

3/4 cup macadamia butter

1/2 cup coconut oil, melted

6 tbsp cacao powder

1/2 tsp vanilla paste

Pinch Himalayan, Celtic Sea or Peruvian Pink salt

3/4 cup Medjool dates, pitted

2 tbsp white chia seeds

WHAT YOU’LL NEED TO DO:

  • Line an glass baking dish (around 8 x 5 inch) with baking paper
  • Add the nut butter, coconut oil, cacao powder, vanilla and salt to a food processor. Blend until smooth
  • Add the dates, 1 at a time and further blend until smooth
  • Mix through the chia seeds
  • Press the mixture into your baking dish and refrigerate for 1...

Stewed Fruit Crumble

This one is perfect for a summer day of entertaining, when you want to fill up a few mouths, use up an abundance of seasonal fruit, or offer a sweet dessert, without any added sugar, trans-fats, grains or pasteurised dairy.

This recipe is paleo friendly, but still has a naturally high sugar content from the fruit, so enjoy as a treat!

Stewed Fruit Crumble

Serves at least 8
3 -4 cups stewed fruit of choice (apple, apricot, nectarine, peach)
2 cups almond meal
3/4 cup shredded coconut + extra for garnish
1/2 cup macadamia and/ or cashew nuts
1 tsp cinnamon
1 tsp vanilla extract
1 tbsp raw honey
3 tbsp coconut oil
coconut cream or yoghurt, for serving

  • Preheat oven to 160 degrees C.
  • Add stewed fruit to a baking pie dish.
  • Mix all other ingredients in a bowl and add as a topping to the fruit.
  • Bake in oven for 30 minutes.
  • Add extra shredded coconut to garnish and serve with a dollop coconut cream or yoghurt.
  • Note: it’s somewhat sloppy, but its tastes good

It’s the time of year, to stop and reflect on Australia’s history. To show gratitude for the men and women who have bravely served to protect our country. To appreciate the freedom we live in today because of the battles that were bravely fought so many years ago and the ongoing work from today’s defence force. To celebrate and be proud of the Aussie in you.

1⁄2 tsp bicarb soda

Cleansing Zesty Lemon Curd

Zesty Lemon Curd

Are you looking for new & nutritious ideas for your brekkie or snacks? Try one of my favourites, refreshing Zesty Lemon Curd. Yes, it’s gluten free, grain free and sugar free…nope, not even any natural sweeteners in this one!

 

ZESTY LEMON CURD

Serves 2

What you’ll need:

1/2 tablespoon lemon rind

4 eggs

1/2 cup lemon juice

1/3 cup coconut oil

1/2 teaspoon vanilla paste

1 tbsp ghee, butter or cacao butter

 

What you’ll need to do:

Whisk eggs and lemon zest in a small saucepan, for 1 minute over low heat.

Add in lemon juice, coconut oil, vanilla & butter/ghee/ cacao butter. Whisk continuously over medium heat, until mixture thickens. And you’re done!

Option to serve warm or chilled with coconut yoghurt and nut butter, or nuts and seeds of choice.

Enjoy for your first meal of the day, or a smaller portion as a nutritious snack.
