Cleansing Zesty Lemon Curd

Zesty Lemon Curd

Are you looking for new & nutritious ideas for your brekkie or snacks? Try one of my favourites, refreshing Zesty Lemon Curd. Yes, it’s gluten free, grain free and sugar free…nope, not even any natural sweeteners in this one!

 

ZESTY LEMON CURD

Serves 2

What you’ll need:

1/2 tablespoon lemon rind

4 eggs

1/2 cup lemon juice

1/3 cup coconut oil

1/2 teaspoon vanilla paste

1 tbsp ghee, butter or cacao butter

 

What you’ll need to do:

Whisk eggs and lemon zest in a small saucepan, for 1 minute over low heat.

Add in lemon juice, coconut oil, vanilla & butter/ghee/ cacao butter. Whisk continuously over medium heat, until mixture thickens. And you’re done!

Option to serve warm or chilled with coconut yoghurt and nut butter, or nuts and seeds of choice.

Enjoy for your first meal of the day, or a smaller portion as a nutritious snack.

1⁄2 tsp bicarb soda

Now a distant memory, I think back to the moment we discovered the two pink lines on the pregnancy test. I had waited all week for hubby to arrive home from working away so we could find out if this was ‘our time’. The nervous wait was replaced with joy when we discovered a positive reading. We were over the moon to be become parents to another little soul.

Fast forward to eleven weeks gestation, past the dreaded nausea, daily napping and ultra-sensitive nose. I had just started experiencing relief of my symptoms and we’d begun our camping adventure along the Gibb River Road from Darwin, to Broome. There was so much to be grateful for being out in nature, amongst the warming sunshine and spending quality time with good friends. Yesterday I could not keep the smile off of my face, giggling to myself (and with work colleagues) about my little morning incident

For those of you who missed it, after enjoying a shower post hot yoga class, I proceeded to change into my work clothes… only to realise I had left my skirt at home. Oh S**t! For those of you who have been to a hot yoga class appreciate the fact that wearing my sweaty shorts was not an option. So off to work it was (with a wet towel wrapped around me) to start my first consultation of the day (slightly awkward to say the least).

Luckily my friend saved the day and delivered me a skirt to work, so the drama didn’t last too long. Phew!

Stress and sleeplessness used to be my enemy.

I was a perfectionist with an overactive mind, always worrying about what people think. This would cause me to lie awake for hours on end at night…mulling over the day that was.
