If you have tried my Grain Free Chocolate Brownies and loved them, you'll want to try this white chocolate variety too. It's completely grain (therefore gluten) free and is the perfect dessert or entertaining snack to impress.
All you’ll need is a food processor & you’re set.
Here goes...
1 can organic cannelloni beans, drained and rinsed
2 eggs
¼ cup shredded or flaked coconut, further processed into small peices
2/3 cup raw honey
1/3 cup organic, cold pressed, unrefined coconut oil
1 teaspoon vanilla extract
½ teaspoon gluten free baking powder
Pinch Himalayan salt
1/2 cup Cacao butter melts, blitzed (I use Honest To Goodness brand)
1/2 cup raspberries, fresh or frozen
Preheat oven to 180 degrees Celsius
Grease a 10 x 20cm (approximately) baking dish or pan with coconut oil, or line it with breech free baking paper
Add all ingredients (except blitzed cacao butter melts) into a food processor and blitz until mixture is smooth
Stir through most of your blitzed cacao melts followed by the raspberries
Pour mixture into your baking dish and sprinkle with the remaining blitzed cacao melts
Bake for 35 minutes and cool thoroughly before cutting into small squares
Serve as they are or with a dollop of coconut yoghurt
