If you've stumbled across this post, it's likely you're wanting to improve your gut health. Well you're in the right place as this super simple drink is a very powerful healer when it comes to your gut and overall health.

Fermented cabbage contains large amounts of vitamin C and consuming the juice is a powerful way to boost your stomach acid, rebuild your beneficial gut bacteria, support your immune health and detoxification.

Let me give that to you again...

Benefits Of Regularly Consuming Sauerkraut Juice:

  • Supports your stomach acid production and therefore digestion and absorption of nutrients
  • Rebuilds your beneficial gut bacteria and therefore your immune health
  • Supports your detoxification

What You'll Need:

1 large organic cabbage

Sea or Himalayan salt

Filtered water

4 large (1-1.5 litre) glass jars. You may need more depending on your cabbage size.

Extra 1.5 - 2 litre jar for the brine mix

What To Do:

  • Chop the cabbage into chunks and then into a food processor to chop the cabbage very finely (the finer the better for releasing nutrients)
  • Add each jar around 1/3 full with the cabbage
  • Make the brine mix for each jar: add just under 1 tablespoon salt into 1 litre water into a seperate jar, add lid and shake.
  • Pour over your cabbage and salt mix, leaving 2.5cm at the top to allow for the fermentation gasses.
  • Seal the lids to help to stop mould from ruining your sauerkraut juice. You do not need to open them until the end.
  • Leave in a dark cool place (must be away from direct sunlight) for 2- 4 weeks (hot, humid areas the faster it will ferment). You will know if it it ready when you can taste it is sour. Avoid opening to taste too often as this will encourage mould growth.
  • When it's ready, strain the liquid into a new jar and you can enjoy this as sauerkraut.
  • Store your sauerkraut juice in the fridge.

How To Include In Diet:

  • For giving to babies, see my direction in my baby health guide, Thriving Bubba.
  • Otherwise start with 1 tsp and increase over time up to 1 tbsp before meals.
